Along the river between the sea and the town of Kampot, the water is channeled and filtered in a succession of ponds. Crystals of Flower of Salt form with heat and evaporation. They float for an ephemeral duration on the surface of the water and are collected with a dedicated tool at a specific time before they sink to the bottom of the basin. Each salt basin produces a tiny amount of Flower of Salt only when it is warm, sunny weather and with very little wind.
