The fruits of Long Pepper are harvested by hand at full maturity. They are then cleaned and sun-dried in strips, to obtain naturally crisp and spicy chips.
The originality of this spice has already surprised many gourmets. The Leather of Long Pepper is very sweet first in the palate, it gives the impression of eating a caramel or a CarambarTM. Then, in a second time, the aromatic force of Long Pepper is revealed with hot and spicy notes of gingerbread or speculoos.
The Leather of Long Pepper will deliciously spice up a duck Carpaccio, a shrimp salad. It can also reveal a chutney of onions, a quince confit or more surprisingly a chocolate fondant. Simply cut the chips into small pieces or crush them with a mortar.
