Look carefully at the picture of the peppercorns: the birds completed their job well by making beautiful white peppercorns. The Bird Pepper is indeed the exclusive work of a frugivorous bird, the bulbul goiavier (Pycnonotus goiavier). In the late harvest period, when the peppercorns ripen and turn from green to red, the birds are flying around the pepper plantations. The birds, like us, particularly appreciate the sweetness and the perfumed flavor of the ripe and juicy red fresh corns. They then peck the larger grains on the bunch, digest them and reject the kernel in their droppings. The gastric juices of their digestive system destroy the pericarp of the pepper and make a beneficial transformation to the aromas of white peppercorns.
The corns have to be collected one by one, in the droppings of birds, all around the pepper plantation. This meticulous and long work is done by women when weeding by hand, allowing them to harvest a few dozen corns a day. The peppercorns are then washed and sun-dried.
At La Plantation, we harvest a few pounds of real Bird Pepper each year. The authenticity of La Plantation Bird Pepper is certified by KPPA (Kampot Pepper Promotion Association).
At the end of the 19th century, Auguste Pavie, who lived in Kampot from 1876 to 1879, as a telegraph agent, testified to the excitement that seized pepper growers to pick up the Bird Pepper corns, famous for its aphrodisiac properties, and sell them in Chinese pharmacies in Kampot.
The Bird Pepper is an exceptionally aromatic pepper that pairs perfectly with white meat, fish, eggs in all forms (boiled, poached, fried, scrambled). More powerful in aromas than the White Kampot Pepper, the Bird Pepper develops floral and lemony notes.
Once the package is opened, we recommend that you keep the Kampot Bird Pepper corns in a cool, dry place, away from light and moisture, so that it retains all its flavor and aroma.
