

The seeds of our wild bird chili were harvested in the nearby forest because this small species is no longer cultivated in Cambodia. They are now grown at La Plantation around our Kampot pepper plantation.

The Bird chili is a rare variety in Cambodia now grown at La Plantation. The chili fruits are harvested by hand, dried immediately and packaged immediately to retain all their flavor.
With a beautiful orange-red color, the Bird Pepper is ranked 8 on the scale of Scoville. Torrid, it is ideal to spice up an olive oil with herbs and Kampot Black Pepper, or simply ground with a chili mill to spice up your fresh cheeses, dishes and sauces.
It will be used as a base for spicy sauces such as harissa, rougail, traditional Argentinian chimichurri, guacamole, a sauce or a spicy curry paste. You will appreciate its flowery and spicy scent.
Once the package is open, we recommend that you keep the Bird Chili in a closed jar, protected from light and moisture, to retain its flavor and color.
